"If one wants to know, I'll be more than happy to share any recipe with the guest." - says our esteemed chef Vladimir Bardžić, who does not believe in cooking secrets.
"When the dish is on the guest's plate, it’s the end of the story for me. I'm moving on. I'm looking for a new combination of flavors - a new dish. I don't stand still. My profession demands constant improvement."
Originally from Northern Macedonia, chef Bardžić received his culinary education in Montenegro, where he learned from proficient Montenegrin and Italian chefs. During his career, he also worked in Austria, Switzerland and the Canary Islands.
Today, our chef Bardžić is a member of the Master Chef Association with an international judge certificate.
For the past 11 years, chef Bardžić has been working in Croatia. He points out that during this time he collaborated with excellent chefs from whom he learnt a great deal and who made him fall in love with Dalmatian cuisine.
"One can eat well in all of Croatia, but only Dalmatian people know the true meaning of guštati " (Dialect expression for enjoying life's small pleasures.)
Restaurant Lazaret presents a professional challenge for him, an opportunity to showcase his knowledge, culinary skills and his interpretation of Dalmatian cuisine.
"At the Lazaret restaurant, for the first time in my career, I have free hands in creating the menu and presenting the dishes. I embraced the tradition. The offer will include dishes such as octopus salad and 'pašticada', but with my signature, in a more modern way. I want to introduce molecular gastronomy to the guests. Unexpected combinations of ingredients and innovative food processing techniques that result in a burst of flavors."
When not in the kitchen, chef Bardžić enjoys fishing, and he loves to cook his catch on the grill or in a pan with Trieste sauce.

• To begin with - swordfish filled with Pag curd as a cold appetizer
• Sea urchin risotto as a warm appetizer
• Smoked mackerel on a bed of pickled apple cream and celery with white polenta as the main course
• And something sweet for the end – dried figs cooked in sweet wine with cinnamon cream and caramelized lemon zest for dessert
